Quickest dinner you’ll ever make? Open the vegetable drawer in your fridge, find all the leftover vegetables you have yet to consume, chop them up into chunky pieces, throw them in a baking dish, cover them with freshly grated tomato or a can of crushed tomatoes, add generous amount of olive oil, salt, pepper oregano, bake until soft and there you have it ‘briam’ vegetable bake. In my opinion, there are no set rules as to which vegetables you MUST add into this dish. Do you agree?

My mother is one of those ‘fussy’ eaters who can’t be easily please…my grandmother on the other hand always said when commenting on food, “it’s delicious, but maybe next time just a little bit more of this and a little bit of that and it’ll be just perfect” and she always stated her comments in a very polite manner. But back to these olives…my mother, the fussy eater, sent me a text stating they’re the best she’s ever eaten in her life. I replied to her by revealing my secret as to why they turned out so well… “they were made with love” I told her ❤️❤️❤️

I know it’s winter and I know salads are for summer, but, I hope this will help answer the question of “what should we cook today”? I’m just loving these wholesome bowls of deliciousness and goodness. Here’s how you could build an epic salad: - Start with your base, think leafy greens, red cabbage, radicchio, spinach & rocket… - Add some roasted veggies, think beetroot, pumpkin, zucchini, capsicum, sweet potato… - Add some crunch, nuts and/or seeds, think walnuts, almonds, hazelnuts, sunflower seeds, pepita seeds, sesame seeds… - Add a grain, think brown rice, quinoa, freekeh, bulgur… - You might want to add legumes too, think chickpeas, lentils… -Then you’ll need some creaminess, think feta @dodoni_feta goats cheese, ricotta - Finally, a dressing, olive oil, lemon or vinegar, honey, mustard, yoghurt.. Obviously these are just some ideas to get you going. Please comment below and add some additional suggestions or some of your favourite combinations. I’d love to hear them.

Consider this for a refreshing start to your day! Breakfast is said to be one of the most important meals of the day. This is a recipe for Bircher muesli that has a secret ingredient (well at least I didn’t know about it) and I got from the chef at a hotel, while I was staying in a Noosa. So sometimes when I’m craving something for lunc

So sometimes when I’m craving something for lunch and I’m working from home, but seriously do not want to bake a whole tray of it (there are only two of us in my household), I will get a small glass baking dish and make Cretan boureki just for two. I also prefer it warm so I don’t like leftovers cold for next day. I like boureki without pastry on the bottom and the top. So I simply layer thinly sliced potato and zucchini with a combination of feta and ricotta, sometimes I add a little milk if the ricotta is a bit dry, and lots and lots of mint and of course a decent amount of olive oil and bake until everything completely softens and melts. Healthy. Delicious. Quick. Easy.

Yesterday I had the privilege of hosting an online cooking class with a beautiful delightful group. All of the guests came from different backgrounds and had varying cooking abilities but what they all shared in common was an eagerness to learn. None of my guests had ever tasted or made portokalopita, but all of them rolled up their sleeves and took part. Each household had their very own tray of portokalopita at the end of the class to share with their friends and family. There are now six more people that know how to make this dish and that’s six more people that will continue to share this recipe and share the love and enthusiasm for Greek food and cooking. And that is quite simply why I do what I do with absolute love and passion.

Definitely not the prettiest to photograph but my golly gosh how good do lahanodolmades taste! Lahanodolmades are cabbage rolls stuffed with rice! We make them without mince, most Cretans lean towards the vegetarian version. The cabbage becomes so sweet when blanched and then slow cooked in the pot to finish off the cooking of the lahanodolmades. They can be made with a tomato based sauce or a lemon sauce. How do you like yours?
