Greek Beach Doughnuts Paralias

Here is the recipe for Greek Beach Doughnuts Paralias. Doughnuts Paralias – Paralia means beach. So essentially these are beach doughnuts!

Why the weird name? Simply because these doughnuts are commonly sold along the shore of the beach in Greece.

Have you ever found yourself in Greece lying on a sun-bed beneath the shade of an umbrella, relaxing, when suddenly you hear a man’s voice shouting out, repeating loudly the words, doughnuts and fruit salad, doughnuts and fruit salad, doughnuts and fruit salad.

This is about the time that I frantically get up, searching for my wallet so I can run up to him before he or the doughnuts swiftly disappear.

Ironically, I normally get a doughnut and a fruit salad but technically you’re supposed to choose one or the other, that is, healthy or not healthy.

Ingredients Greek Beach Doughnuts Paralias

7g dry yeast

150mls milk warm

50g sugar

1 medium egg

1 tablespoon vanilla sugar

350g plain flour

1/2 tsp salt

50 g butter melted

Oil for frying

Sugar to dust

Method Greek Beach Doughnuts Paralias

1. Mix the yeast with the milk and one tablespoon of the sugar and mix well before adding a couple of tablespoons of plain flour and let it activate for 5 to 10 minutes (until you start to see bubbles forming).
2. Then add the egg, remaining sugar and vanilla sugar.
3. Add in the remaining flour and the salt followed by the melted butter.
4. Bring the dough together by kneading it by hand for 10 minutes or in a mixer for 7 minutes.
5. Rest the dough for about an hour in a bowl covered with cling wrap or a towel until it doubles in size.
6. When ready, roll out the dough and cut using a large cooking cutter and then using a small cookie cutter to cut into the space of the larger round disc to create a hole. Essentially you should have a large ring that resembles a doughnut.

7. Place the rings onto a piece of baking paper, cover lightly and let the doughnuts rest for 30 minutes.
8. Heat the oil to a medium heat and fry on each side for a few minutes only to lightly colour them. Remove from heat, drain on absorbent paper and dust with sugar while still hot.
