Artos Sweet Bread Recipe
Here is the recipe for Artos Sweet Bread.
This bread is a sweet, soft, aromatic and delicate bread that is commonly made on the celebration day of Tis Panagias, August 15th.
I specifically remember the day I completely fell in love with Artos.
Although I’ve always enjoyed it as my grandmother would bring it home from church and I would taste it and straightaway notice the sweetness of it and ask if she had any more.
However, the day that I absolutely could not stop eating it, literally, was when I was in Crete in August 2018. My Cretan family took us to a church festivity to celebrate Tis Panagias. There was an abundance of leftover Artos that my auntie gave us each an entire half loaf. It was so delicious, the most beautiful sweet bread I’d ever had.
Ingredients for Artos Sweet Bread Recipe
1 bay leaf
2 cinnamon sticks
Boil all the whole spices with the water for approximately 3-4 minutes to yield 250mls of spiced water. Pour through a strainer and set aside to cool to a lukewarm temperature.
250mls of the spiced water
500g flour (250g plain flour and 250g strong flour)
1 sachet 7g dry yeast
40mls olive oil
1/2 teaspoon cinnamon powder
1/2 teaspoon aniseed and 1/2 teaspoon mastic crushed with a little sugar
1 orange, zested
1/2 teaspoon salt
Extra flour for kneading if needed
Method for Artos Sweet Bread Recipe
In a bowl, mix the spiced water, with a tablespoon of the flour, and a tablespoon of the sugar together with yeast. Leave it for 5-10 minutes until small bubbles begin to form then add all the remaining ingredients.
Knead with the dough attachment or by hand until you have a elastic soft non sticky dough about 7-10 minutes.
Cover with a clean towel and leave in a warm place for 1-2 hours.
Then knead again for 3-5 minutes and form a round shape and place in a tray lined with baking paper and let it rise again for 45 mins. Bake in a preheated oven at 175°C for 45-50 minutes.
